Vegan cooking can be as easy or challenging as you want to make it. I’m a “10-minute—five ingredient” kind of gal so here is a crockpot bean recipe that takes minutes to make. If you put it together in the morning, it will easily be ready for supper. (Read the accompanying Gathering Around the Table article, "Vegan Mennos.")
Prep time: 5 minutes
Cook time: 6 hours
Yield: about 6 cups
Ingredients:
- 1 lb dry beans of any kind
- 1 small onion, diced – or 1 tablespoon onion powder
- 4 cloves garlic, smashed – or 1 tablespoon garlic powder
- 1 tablespoon salt
- 1 tsp. black pepper
- Chili peppers to taste (optional)
Sort through beans for stones and rinse with water. Place beans in a deep bowl and cover them with water (at least 3 inches over the beans) and let sit on the counter overnight. Or (this is what I do), boil them for an hour.
Drain and rinse beans. Place in crock or slow-cooker pot. Stir in onion, garlic, salt, pepper, (and chili peppers.) Fill with enough water to cover beans with at least 2 inches with water. Set the crock pot for 6 hours at high heat and let them work their magic!
P.S: Beans are chockfull of protein!
